Bo Kwon Koi Fusion’s creator is the oldest child of two working Korean immigrants and has taken his inspiration for combining traditional Korean flavors with unlikely partners with creations like Kimchi Grilled Cheese sandwiches, leftover Spaghetti with Bulgogi & Kimchi. Bo eventually purchased a food truck and opened up his first location of Koi Fusion and began bringing Korean fusion to all of Portland.
